Apple Pie

Occasionally, I will have some fruit in my fruit basket that I bought a week before and is getting overlooked.  This week, there were two apples that no one was paying attention to, so I decided to use them to make apple pie.  In this recipe, I reduced the fat and sugar contents, so eating one serving won't make you feel guilty :)


This recipe will make 4 servings.

The dough:
  • 1 and 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 2 tsp sugar
  • 4 tbsp diced, cold butter
  • 1 large egg
  • 4 tbsp cold water
  • 1 egg yolk (to brush the surface of the pie)
The filling:
  • 2 large apples
  • 2 tbsp butter
  • 3 tbsp sugar
  • 1 tsp cinnamon powder
Instructions:
  1. Start by making the filling.  Peel and dice the apples into small cubes.
  2. Put the cubed apples into a non-stick pan and add the sugar, butter, and cinnamon.
  3. On medium-high heat, cook the apples until the juices evaporate and the apples are caramelized.
While the apples cook, make the dough
  1. Combine all the dough ingredients into a food processor.
  2. Pulse the ingredients until they combine.
  3. Remove the dough from the food processor and put it on a flour-dusted surface.



*Tip: You may use this dough to make one big pie by dividing it in half for the bottom and top of the pie, or use personal pie molds, which is what I did. 
    4.  Use your hands to shape the dough into a long roll.
    5.  Divide the dough into 8 equal pieces.

 
    6.  Using your hands, mold the dough into personal pies, placing one piece of dough into each of the four molds.

*Tip: These molds are non-stick, you may use baking cups inside your molds if you want.

 At this time, pre-heat the oven to about 350°F the filling should be ready, and should look like this

Divide the filling among the four servings.

Top each serving with strips of the dough or cover it completely, like so


*Tip: If you decide to cover the pie completely, you have to make a breathing hole in the center of the pie and line it decoratively with a knife.

Brush the surface of the pies with egg yolk and place in the oven for about 15 minutes or until golden brown
