No Butter Croissant Recipe

To those who love croissants, today we're making my version of the french pastry, without butter.  These are perfect for parties, special occasions, or simply breakfast with a cup of coffee.
This recipe will make 24 croissants.

Ingredients:
  • 4 cups all-purpose flour
  • 1 cup milk
  • 1/2 cup corn oil
  • 2 eggs
  • 2 tablespoons sugar
  • 2 tablespoons yeast
  • pinch of salt
Fillings:
  • Chocolate hazelnut spread
  • Za'atar herb mix
    • 3 tablespoons Za'atar herb mix + 3 tablespoons extra virgin olive oil
  • Cheese
    • Your favorite shredded cheese
Toppings:
  • 1 egg yolk mixed with 2 tablespoons of milk
Directions:
  1. Mix the flour, sugar, salt, and yeast.
  2. Add oil, milk, and eggs and mix.
  3. You will now have a sticky dough.
  4. Place the dough in a bowl lined with some oil.
  5. Cover the bowl with plastic wrap and let the dough rest for one hour, until the dough doubles in size.
  6. Powder your work station with flour.
  7. Take the dough out of the bowl and split it into three equal pieces.
  8. Roll one piece until it is thin and shaped like a circle.
  9. Cut the circle into eight even triangles, like a pizza.
  10. Fill each triangle with the desired filling and roll it into the shape of a croissant (make sure that it is fully closed!)


  11. After you are done filling and rolling each triangle, place them into a baking sheet.
  12. Repeat for the other two pieces of dough.
  13. Brush the tops of the croissants with the egg yolk and milk mixture and optional toppings*.
  14. Bake at 400°F for 7-10 minutes, until the croissants are golden brown.
*Tip: In addition to the egg yolk and milk mixture, you may top the croissants off with sesame seeds, fennel flower seeds, or a bit of chocolate like I did.
