I had a request for a Fasoulia and Rice recipe yesterday.

"Fasoulia" is what the Lebanese call chili. Generally, the Lebanese eat fasoulia with a side of rice. This dish is a great source of fiber and protein, and is all-in-all wholesome and filling.
This recipe will serve four people, approximately.
The fasoulia:
- 2 cans of your favorite lima bean
- 1/2 lb lean stew meat, cubed (optional if you are a vegetarian)
- 2 cups crushed tomatoes
- 3 cloves garlic, smashed
- 1/4 cup fresh coriander, chopped
- 1 tsp salt
- 2 tbsp vegetable oil
- Water
*Tip: You may add a pinch of the Arabic "Seven Seasonings", which you can find at your local Arab grocery, or you may add a pinch of black pepper for an extra flavor.
*Tip: Add or reduce salt depending on your preference!Before starting: wash and drain the beans!
Preparing the fasoulia:
- In a medium-sized pot, add the oil.
- Once the oil is hot, add the meat.
- Add 1 teaspoon of salt and pinch of pepper.
- Stir until the meat is nicely browned.
- Add water enough to cover the meat.
- Once the water boils, turn down the heat to medium-low and cover the pot until the meat is cooked thoroughly.
- Add beans, crushed tomatoes, and garlic.
- Turn the heat up to a high and cover the pot.
- Once the sauce boils, the beans will need 7- 10 minutes to cook.
- Finally, stir in the fresh coriander.
You may now enjoy the fasoulia with your preferred side of rice or continue to see how I make my rice!
The rice will take about 15 minutes to complete.
Rice with angel hair:
- 2 cups long grain white rice
- 2 and 1/2 cups water
- 4 tbsp crushed angel hair pasta (photo below)
- 3 tbsp olive oil
- 2 tsp salt (or to your preference)
Before starting: soak rice for 10 minutes, wash and drain.
Preparing the rice:
- In a medium-sized pot, heat the oil and add the angel hair.
- Stir until angel hair is lightly golden.
- Add rice and stir.
- Add water and salt. Stir.
- Once the water starts to boil, stir and cover the pot, and turn the heat down to a low level.
- Continue to stir often until the rice is fully cooked.
