A Lebanese Breakfast

Today we're recreating the legendary Manaqish (for my Arab readers, مناقيش).
This is the traditional, fast food breakfast in Lebanon.  You purchase this hot pastry fresh from your local bakery in Beirut, and enjoy it on the go.  This pastry comes with many different toppings, including thyme, cheese, meat, vegetables, and various other options.
Today we're focusing on thyme and cheese. 





The dough:
  • 3 cups flour (or more if the dough is too sticky)
  • 1/2 cup vegetable oil
  • 1 and 1/2 cup warm water (or more if the dough is too dry)
  • 1 tsp yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 1 tsp powdered milk
*Tip: Your dough must not be too sticky and it must be soft.  You may adjust the texture by adding flour or water when necessary.
The thyme topping:

  • 5 tbsp thyme
  • 1/2 cup extra virgin olive oil
*Tip: You may find the thyme (za'atar) at your local Arabic food market or grocery. You may also buy it online. It's an excellent seasoning and it lasts forever!
 The cheese topping:

  • 1/2 cup mozzarella
  • 1/2 cup part-skim milk cheese
  • Sesame seeds (optional)
Directions for dough:
  1. Mix the dry ingredients
  2. Add oil and water
  3. Let rest for 10 minutes
  4. Preheat the oven at 500°F
  5. Divide into five even pieces
  6. Roll the dough into thin circles
  7. Place in a baking sheet
  8. Spread on the dough the topping you like (cheese or thyme)
  9. Bake each piece for 5-7 minutes at 500°F or until the crust is golden-brown.
*Tip: Manaqish are best with a side of fresh tomatoes, cucumber, mint leaves, olives, and a steaming cup of tea. Enjoy.
